DIY: Chunky Monkey Cupcakes

Camp might be nut free, but that doesn’t mean your kitchen has to be!

 

One of the most well-loved flavor combinations is peanut butter banana! We decided to put a twist on this classic combo by adding everyone’s favorite: CHOCOLATE!

 

Here’s what you’ll need:

  • 1/4 cup chocolate chips
  • 1 box of white cake mix
  • 3 eggs
  • 1 1/4 cup water
  • 1/3 cup vegetable oil
  • your favorite vanilla frosting
  • One large banana
  • 1/2 cup + 2 tbsp (separated) peanut butter

How to make it:

  1. Preheat your oven to 350 degrees
  2. Mix eggs, water, oil, and cake mix for 2 mins in electric mixer
  3. Fill 2 standard sized muffin/cupcake tins with cupcake liners and pour mix into pan
  4. Bake for 15 mins or until slightly golden on top
  5. While your cupcakes are in the oven, stir in 1/2 cup of peanut butter with 1 cup of vanilla frosting for a thick peanut butter frosting
  6. Slice bananas
  7. Melt chocolate chips and drizzle melted chocolate over top of cupcakes
  8. Heat 2 tbsp of peanut butter in the microwave and drizzle melted peanut butter over top of your cupcakes
Serve and enjoy!
